I'm not sure what the capacity of the tablespoon is but I have a feeling that's where I went wrong, with the quantity of golden syrup. Hi Kate, We're glad you found a use for the crumbs! The slice may be crumbly if the quantity of wet ingredients is insufficient, or if the slice mixture isn't firmly pressed into the pan. Tastes absolutely delicious, just very crumbly, I found the icing actually detached from the base once cut into slices, and found that I had to wait a little longer than a minute to put icing on. Made this today but it turned out quite crumbly when I cut it into slices to pull out of the pan. If you try making the slice with copha or oil, please let us know how it turns out. We have only tested this recipe with butter, so we aren't sure whether copha or vegetable oil would work. The icing should be quite thick at this stage however, it will spread easily when placed on the hot slice. Add butter and milk and stir until smooth.
